CORONATION CHICKEN

Dice the chicken (5 breasts)
Cover with water, bring to a boil just, then simmer it.
1 cup for each chicken breast

When itís boiled add some chicken in a mug.
Turn chicken down to simmer then cook 15 to 20 minutes.

5 cups of Mayo
1/4 cup plus 1 TBSP Apricot preserve
1/2 cup or a smidge less Korma Paste

Serve it room temp in a hot baked potato

Delyth makes this dish for us when we beg her long enough. It's not common in Canada to put so many things in a baked (jacket) potato, although it's common in Wales. Such a simple dish but absolutely delicious. Thanks Delyth
