Marinara Sauce

3 TBSP. EVOO
1 28 ounce can crushed tomatoes
1 28 ounce can whole peeled tomatoes in juice
1 onion chopped
1/2 cup dry red wine
1 roasted red pepper chopped
1/2 green bell pepper (optional)
5-7 garlic cloves crushed
Italian seasoniing (Oregano, crushed red pepper, basil,, parsley etc)
salt and pepper to taste
dash of baking soda
1/2 tsp of sugar (optional)

Add EVOO to a dutch oven and heat to medium. Add chopped onions and peppers and saute until soft, add garlic and saute 5 more minutes. Add red wine and cook until reduced. Add tomatoes, and simmer for at least 3 hours, up to all day. Add seasonings and taste, adjust and add more seasoning as appropriate
 

Meatballs

1 pound ground beef
1 pound ground italian sausage (hot)
2 eggs
1/2 cup italian bread crumbs
1/2 cup chopped italian parsley
italian seasoning to taste
Crushed hot pepper
salt and pepper to tasteser

Pre-heat oven to 350 OR cook in airfryer
MIx all ingredients together in stand mixer. The ratios of the ingredients are approximate as I just throw things in the mixer without measuring. Once the meat is well incorporated, I scoop with a cookie scoop and roll into balls. Bake for about 25 minutes. Once cooked, serve with your favorite sauce, noodles and of course garlic bread.

This is a staple and keep in mind the ratios are approximate. Spaghetti and meatballs is a special meal that is eaten every Christmas eve in our home.
