1 Beaten egg
1/2 Cup bread finely crushed bread crumbs
1 Tsp. minced dry onion or dry onion soup mix
1 Tsp. Worcestershire sauce
1/4 Tsp. garlic powder
1/8 Tsp. black pepper
1/8 Tsp. celery salt
1 to 1 &1/2 lb. of lean ground beef
1/2 Tsp. Italian seasoning (Optional, but nice if you are serving these with spaghetti sauce)
2-3 Tbsp. milk

Directions:

Mix all the spices with the bread crumbs and mix into the lean ground beef. Then add the beaten egg and the milk. Use a wooden spoon or your hands to mix everything together. Line a cookie sheet or a shallow baking pan with foil. Spray with cooking spray. Also spray your hands. Form into 1' meatballs. Place on the tray and Bake for 10 minutes in a preheated 400F oven. Cool and package in two or three containers depending on the number that you need for a meal. Use in meatball stew or spaghetti and meatballs.


MEATBALL STEW
Cook all he vegetables until tender. Then dissolve the bouillon cube and add to cooked vegetables.
Thicken with the paste made from the flour and water. Don't drain the water after cooking the vegetables. Use 1 recipe of make ahead meatballs.
2 medium potatoes, peeled and cubed
2 medium carrots, sliced
1 onion, chopped
2 stalks celery, washed and sliced
2 Tbsp. Beef Bouillon granules or 1 cube
1/3 cup flour or Tapioca flour
1/2 Tsp. pepper
1 cup frozen peas

This a great time saver if the meatballs are made ahead of time and frozen. They are delicious in a mushroom sauce or spaghetti sauce or just plain beef gravy.
