1.5 lbs golden or red potatoes
olive oil
Salt and Pepper, to taste
1/3 cups salsa verde

Directions:
Directions:
1. Preheat the oven to 450 degrees F.

2. Line a sheet pan with foil.

3. Cut the potatoes into 1-inch-wide wedges.

4. Transfer to the sheet pan. Drizzle with olive oil and season with salt and pepper; toss to coat. Arrange in an even layer, skin side down.

5. Roast 35 to 37 minutes, or until lightly browned and tender when pierced with a fork. Remove from the oven.

6. Carefully transfer the roasted potatoes to a reserved bowl. Add the salsa verde; stir to coat.
