1 1/4 cup sugar
6 Tablespoons cornstarch
2 cups water
1/3 cup lemon juice
3 eggs separated
3 Tablespoons butter
2 teaspoons white vinegar
1 1/2 teaspoons lemon extract

Directions:
Directions:
Mix sugar and cornstarch together on top of double boiler. Add 2 cups water. Beat egg yolks and lemon juice together in small bowl. Add to sugar mixture and cook until thick, about 25 minutes. Add lemon extract, butter and vinegar. Stir thoroughly. Pour into baked, deep 9-inch pie shell. Let cool. Cover with meringue and brown in oven.
