1 TBSP butter
cup onion (chopped)
2 cloves garlic
1 TBSP all pupose flour
1 cup half & half
2 pkgs (9 oz each) frozen chopped spinach (thawed & drained)
8 oz can sliced water chestnuts, drained
1 cup shredded cheddar cheese
1 oz pkg dry vegetable soup mix
cup shredded parmesan cheese

Directions:
Directions:
Preheat oven to 425. Melt butter in large saucepan. Add onion and garlic, coo until onion is done (2-3 minutes). Stir in flour, cook one minute, add half & half. Cook, stirring constantly until mixture boils and thickens (about 2 minutes). Remove sauce pan from heat, stir in chopped spinach, water chestnuts, cheddar and vegetable soup mix. Spoon into a 1 qt casserole dish Sprinkle with parmesan. Bake until dip is bubbly (10-15 minutes).

Serve warm with fresh bread.
