2 cup Pioneer Low-Fat Biscuit and Baking Mix
1/2 cup sugar
2/3 cup skim milk or water
1/4 cup vegetable oil
2 large egg whites
1 tsp. vanilla extract
2 tbsp. sugar
1 tsp. cinnamon

Applesauce Muffins: Omit skim milk or water and substitute brown sugar for sugar. Add 2/3 cub applesauce and 1/2 teaspoon cinnamon

Preheat oven to 375F. Lightly oil a 12-cup muffin pan.

Combine Pioneer Low-Fat Baking Mix and 1/2 cup sugar in a bowl. Make a well in the center.

Combine milk, oil, egg whites and vanilla; add all at once to dry ingredients. Stir just until moistened.

Spoon mixture into muffin cups, filling half full. Combine 2 tablespoons sugar and cinnamon. Sprinkle evenly over batter.

Bake 20 minutes or until golden brown. Remove from pan; serve warm.
