1 can creamed corn
1 can whole kernal corn, drained
1 medium onion, chopped
4 Tbsp butter
4 Tbsp all-purpose flour
2 tsp salt
ground pepper to taste
1 1/2 c milk
2 eggs
1 c cracker crumbs, I like to use Club Crackers or Ritz, any saltine will do
3 T butter

Directions:
Directions:
Preheat oven to 350º. Cook the onion and 4 Tbsp butter in a saucepan on medium heat until tender. Stir in flour, salt & pepper. Cook over low heat stirring until bubbly. Add milk slowly, stirring until the mixture thickens. Add eggs and stir until cooked into the mixutre. Mix thoroughly with corn in an ungreased casserole dish.

In a separate pan, mix the cracker crumbs and 3 Tbsp butter until melted and use this to top the dish. Bake uncovered for 30-35 minutes or until bubbly.
