2 extra ripe bananas 1-1/4 cup flour
1 egg 1/2 cup whole wheat flour
2/3 cup brown sugar, packed 2 tsp baking powder
1/3 cup buttermilk 1 tsp ground nutmeg
1/3 cup vegetable oil 1/2 tsp baking soda
1 tsp vanilla 1/4 tsp salt
1/4 cup mini semisweet chocolate chips

Directions:
Directions:
Puree bananas. Beat egg and sugar until smooth. Mix in pureed bananas, buttermilk, oil and vanilla.
Combine dry ingredients, stir into banana mixture with chocolate chips, mixing just to blend.
Spoon into greased or paper lined mini muffin pans. Bake at 375 oven for 12 minutes ( for
mini muffins) or 17-20 minutes for standard muffins.
Turn out onto racks to cool.

I freeze my extra ripe bananas and make these every few months!
I use buttermilk powder - put liquid in with banana mixture and powder in with dry ingredients before mixing
