1 1/2 cups flour
3/4 cup sugar
4 teaspoons salt
1/2 teaspoon baking powder
3/4 cup rolled oats steel cut.
1/3 cup oil
2 whole eggs - slightly beaten
2cup mashed banana (2 +large)
2 tablespoons lemon juice (1 lemon)
1 tablespoon grated lemon rind
1 cup blueberries (fresh or frozen)
1 teaspoon cinnamon

Directions:
Directions:
-Preheat oven 350F
-Grease a 9"x5"loaf pan.
-Add sifted flour, sugar, salt and baking powder together.
-Add oats, oil, eggs, bananas, lemon juice and rind.
-Do not over mix.
-Gently fold in blueberries. pour into pan and bake for one hour at 350.
-Cool in pan and turn out onto wire rack when completely cool/chill
-Much tastier if left a few hours before cutting.
-Note: Used G/F Robin Hood flour Bake 1 hr +10-15 min
