3 large bell peppers, halved and seeded
1 box Spanish rice mix (Rice-a-Roni is best)
1 lb ground beef
1 sm onion, chopped
2 cloves garlic, minced
1 Tbsp parsley
Salt & Pepper
1 12 oz. can V-8
1 cup shredded mozzarella cheese
1 can Rotel tomatoes

Directions:
Directions:
Brown onions with ground beef. Add remaining ingredients (except rice, V-8, cheese, and Rotel tomatoes)
set aside. Prepare the Spanish rice according to directions and add the Rotel tomatoes to it.
Now add the ground beef mixture. Stuff the peppers, leaving enough mix for a thin layer on the
bottom of the baking dish. Pour V-8 over all, cover and bake at 350 F for about 1 hour.
Uncover and add cheese. Return to oven until cheese is melted.
