1 pound elbow macaroni (Gluten Free Noodles work great too)
1/4 cup butter
2 T flour (Gluten Free works great too)
1 tsp dry mustard
1 T Pepper
2 cups milk
1/2 pound sharp cheddar cheese, grated
1/2 pound Velveeta cheese, cut into cubes
1/2 cup Gruyere, grated
Additional Salt and pepper

Directions:
Directions:

1. Make cheese sauce: melt the butter over medium heat in a medium saucepan. Stir in the flour and dry mustard to form a smooth paste. Stir in the milk and bring to a boil, stirring to prevent lumps. When the sauce thickens, stir in the all cheeses until melted. Season to taste with salt and pepper.
-BE SURE TO WATCH CHEESE SO IT DOES NOT BURN, CONTINUE TO STIR UNTIL MELTED, THEN REDUCE HEAT.
2. Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente. Drain Pasta and Return to Pot.
4. Combine cheese sauce and pasta in the pasta pot.
5. Serve out of pot.
