2.2 lbs. semi-sweet or bitter-sweet chocolate
2 cups whipping cream
Flavouring
cocoa powder
icing sugar

Directions:
Directions:
Melt chocolate over a double boiler. Warm whipping cream making sure it is only warm, not hot. Add the melted chocolate to the cream while you stir. Add flavouring, if you wish. Pour mixture in baking trays 1" thick. Let cool in fridge until the mixture is hard. Scoop small pieces with a melon baller or coffee spoon. Roll pieces by hand into round or oval shapes. Roll the truffles in cocoa powder, icing sugar or anything light.

One of the most important tricks in chocolate making is the tempering process which is when you achieve just the right temperature of melted chocolate to produce that wonderful gloss and crispness that we all enjoy in a good chocolate.
