3 eggs
3 cups Simply Potatoes Shredded Hash Browns or defrosted frozen shredded potatoes (unseasoned)
1/2 cup matzo meal
1 1/2 tsp salt
1 tsp fresh ground black pepper
1 cup of dehydrated onion flakes (soaked in enough chicken stock, or water, to rehydrate)
1/4 cup vegetable oil

1. Preheat oven to 350 degrees
2. Grease a 1 1/2 quart baking dish with the vegetable oil
3. In a mixing bowl, beat the eggs well before stirring in the rest of the ingredients in the order given
4. Pour into prepared pan
5. Bake 1 hour (last 5 minutes can be set to broil to get a crispy topping)
6. Let set about 10 minutes before serving
