Country Woman

1 tbsp. vegetable oil
1 onion, diced
1 rib celery, diced
cup green pepper, finely diced
1 lbs. ground beef
1 cup tomato sauce
cup chili sauce
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
1 tbsp. cider vinegar
1 tbsp. light brown sugar, packed
1 tsp. kosher salt
tsp. freshly ground pepper
6 sandwich buns, split

In a large skillet, heat oil over medium heat. Add onions, celery and pepper, cook, stirring occasionally until onion softens, about 5 minutes. Add beef and increase heat to medium-high. Cook stirring and breaking up beef with spoon, until no longer pink, about 10 minutes. Stir in cup water, tomato sauce, chili sauce, worcestershire sauce, mustard, vinegar, sugar, salt and pepper and bring to a simmer. Reduce heat to medium-low, simmer, stirring frequently for about 20 minutes to blend flavours. Toast buns. Place bottom halves, cut side up on plates and top with beef mixture. Cover with bun tops and serve right away.
