1 pound sliced under ripe peaches (3 cups)
1/4 cup water
sugar

Directions:
Directions:
Cook the peaches in the water for about 5 minutes or until barely tender.
Keep heat low and watch so the peaches do not scorch.
Drain off juice and for each cup of juice add 2 cups sugar..
Boil until sugar spins a thread.
Then add peaches and cook rapidly for 4-5 minutes.
Remove from the fire, skim if necessary.
Let stand in a shallow bowl or tray for 24 hours.
Pack into sterilized KERR Jars and seal.
