2 cups pre-sifted flour
2 Tbsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
4 eggs
1 cup oil
2 cups carrots, grated
1 can (8 oz) crushed pineapple, juice and all
3/4 cup chopped macadamia nuts, walnuts are good too

Frosting
8 oz cream cheese, beaten till fluffy
1/2 cup butter or margarine, mix in with cream cheese till creamy.
Add 1 tsp vanilla
Stir in 1/2 box powdered sugar and beat till smooth and spreading consistency

Mix dry ingredients together. Add sugar, eggs and oil. Mix well.
Fold in carrots, pineapple and nuts. Pour into 9 X 13" baking dish.
Bake at 350 F for about 35 - 40 minutes.

Frost with above frosting once cake has cooled.
