1 (1 lb. 4 oz.) can pineapple chunks
c. light brown sugar, firmly packed
2 Tbsp. cornstarch
tsp. salt
1/3 c. cider vinegar
1 Tbsp. soy sauce (optional)
c. thinly sliced green pepper
c. thinly sliced onion
1 (2 oz.) jar pimientos, sliced and drained

Drain pineapple, add enough water to syrup to make 1 cup. Combine brown sugar, cornstarch and salt in a saucepan. Add pineapple syrup, vinegar and soy sauce. Cook, stirring constantly until thickened. Remove from heat and add remaining ingredients and pineapple chunks. Spoon sauce over meat and heat.

This sauce is especially good on ham, pork or shrimp; and can turn any kind of leftover meat into a delightful taste treat of Polynesian flavor.
