Ingredients: 2 egg whites 1 Tbsp vanilla 1 lb Pecan halves 1 c white granulated sugar (or mix 1/2 Splenda with 1/2 regular sugar) 3/4 tsp salt 1+ tsp ground cinnamon

Directions:Preheat oven to 250º F, (120º C), Grease or place parchment paper on one baking sheet, or several if making more than 1 lb at a time. In a mixing bowl, whip together the egg whites until frothy. Pour into gallon Ziplock bag and add vanilla. Mix it up a bit. In a separate Ziplock gallon bag, mix together sugar, salt and cinnamon. Add pecans to egg whites bag and coat nuts evenly. Transfer the nuts into the Ziplock bag of sugar mixture and shake until coated well. Spread the nuts out onto the prepared baking sheet. Bake at 250º for 1 hour. Stir every 15 minutes or so. Nuts should glaze/caramelize and look glossy. (Sometimes, if using Splenda, the nuts will appear sugar coated and not glossy.) Flavor is the same. Remove from the oven and let cool.
Nuts can be made with more cinnamon or vanilla, depending on one's taste. They can also be made using bowls, but I find this more convenient. Enjoy! |

Notes: Every Christmas Mike & I make these. We saw a vendor at a flea market and figured out how we could make our own. We put them in colored cellophane bags with pretty ribbons and give out to friends, family, neighbors, etc. They are always a big hit! This is tweaked for our tastes, but anyone can try different nuts, amounts of cinnamon, sugar, using part sugar substitute, etc. Westby Branch: Ervin
