German Potato Salad Recipe

Ingredients: 1/2 lb bacon 1/2 c. white vinegar 1 c. water, HOT 2 T flour 3/8-1/2 c sugar 3/4 tsp salt 5 # red potatoes 1/2 c. onion diced 4 hard boiled eggs

Directions: |
Directions:Boil potatoes until tender, drain, then cut into small slices. .Cut bacon up into small pieces and fry until brown and slightly crisp. Remove bacon from pan. Add flour to grease in pan (if it was really greasy bacon you can discard some of the grease) and cook until flour is brown. Add hot water and whisk; add vinegar continue whisking over heat until it slightly thickens. (should be more runny than gravy). Add sugar to taste (should be sweet and sharp flavored) Add salt and potatoes. Sprinkle in onions and bacon pieces. Stir. Add cut up hard boiled eggs on top. Serve warm...but its good cold as leftovers too! |

Notes: This isn't exactly a traditional recipe (most don't have eggs). It was given to me by Kevin's mom, Connie, verbally as she threw things in a pan..'just add water and vinegar to the right consistency" I'd never had German Potato Salad before so this was a challenge..just what IS the right consistency? Keep putting in sugar til it tastes right? Over the years I've come to do it just the same way she did so the measurements are sort of a guess. If it doesn't taste how you want, follow Connie's advice...just add more vinegar or sugar til it does!
