1 lemon
1 tbsp. olive oil
2 garlic cloves, pressed
1 tsp. dried thyme leaves
tsp. salt
tsp. pepper
4 skinless bone in chicken breasts (about 2 lbs.)
cup apricot jam

Directions:
Directions:
Preheat oven to 375F. Using lemon zester, zest lemon to measure 1 tbsp. Juice lemon to measure 1 tbsp., set aside. In small batter bowl, mix lemon zest, olive oil, garlic, thyme, salt and pepper. Place chicken pieces, bone in down on Stoneware bar pan. Spread each with lemon mixture, using skinny scraper. Bake 20 minutes. Mix reserved lemon juice and apricot jam. Brush over chicken pieces, using pastry brush. Return to oven; bake 20 minutes or until chickn is no longer pink and juices run clear when pierced with fork.
