Gyoza Sauce

For 8:
cup soy sauce
cup rice vinegar
1 garlic clove
tsp. ground ginger (or minced garlic root)
1 tsp. sesame oil
1 tsp. hot chili oil (or to taste, optional)

For 2:
2 Tbsp. soy sauce
1 Tbsp. rice vinegar
1 small garlic clove (or tsp. garlic powder)
⅛ tsp. ground ginger
tsp. sesame oil
tsp. chili oil (or to taste, optional)

Directions:

1. Mince the garlic (and the ginger root if using).

2. Mix soy sauce, rice vinegar, garlic, ginger, and sesame oil, and mix well.

3. Divide sauce into small bowls for dipping. Before serving, drizzle chili oil over the top of each bowl.

You may need to visit a specialty Asian store to find gyoza wrappers and a few of the other ingredients.

In the past (before having kids), we hosted a few gyoza-making parties. We made the fillings and rice ahead of time, then guests helped us assemble and cook the gyoza. It takes quite awhile, so make sure you invite people to come an hour or two before the time you want to start eating. The wait is worth it though!

Now we usually buy the Trader Joe's premade gyoza (which is very tasty) and serve with the 2-person version of the homemade dipping sauce.
