1 TB sherry vinegar
TB minced shallot
TB Dijon mustard
1/3 c extra virgin olive oil
salt and pepper

Directions:
Directions:
In small bowl, whisk the vinegar with the shallot and mustard. In a thin, steady stream, whisk in the olive oil until emulsified. Season with salt and pepper.

Herb vinaigrette: add tsp chopped thyme and tsp chopped tarragon

Lemon vinaigrette: substitute 1 Tb lemon juice for the vinegar and add tsp grated lemon zest.
