1 tbsp. sherry vinegar
½ tbsp. shallots, minced
½ tbsp. Dijon mustard
½ c. extra virgin olive oil
salt and pepper

Directions:
In small bowl, whisk the vinegar with the shallot and mustard. In a thin, steady stream, whisk in the olive oil until emulsified. Season with salt and pepper.

Personal Notes:
For herb vinaigrette: add ½ teaspoon chopped thyme and ½ teaspoon chopped tarragon.
For lemon vinaigrette: substitute 1½ tablespoon lemon juice for the vinegar and add ¼ teaspoon grated lemon zest.
