1 TB soy sauce
2 tsp Dijon mustard
c orange juice
c lour
2 large eggs
2 TB water
2.5 c panko crumbs
1 lb pork tenderloin, cut into 12 inch thick slices and pounded 1/8 thick
salt and pepper
vegetable oil for frying

Directions:
Directions:
In a small bowl, stir soy sauce with mustard and orange juice until combined. Set aside.

Put flour in shallow bowl. In another bowl, beat eggs with water. Spread bread crumbs in third shallow bowl. Season pork or chicken with salt and pepper, then dredge the in flour, shaking off excess. Dip slices in egg and then coat them completely with panko.

In a large skillet, heat a quarter-inch deep of vegetable oil until shimmering, to 350 degrees. Working in batches, fry slices over high heat until browned and crisp, about 2-4 minutes per side. Transfer to paper towels to drain. Arrange slices on plates. Pass citrus sauce at the table.
