pastry for one crust pie
2 c. rhubarb diced into ½ in.pieces
pinch of salt
1 c. sugar
3 beaten eggs
1 c. milk
1 tsp. vanilla
¾ tsp. nutmeg

Directions:
Directions:
Preheat oven 400º. Place rhubarb in uncooked pie shell. Mix salt, sugar, eggs, milk, vanilla, and nutmeg. Pour over rhubarb. Bake until knife comes out clean (about 45 minutes). Cool completely.
