2 c.sifted all purpose flour
2 tsp. baking powder
1½ tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1½ c. vegetable oil
2 c. sugar
4 eggs
2 c. grated carrots
8 oz. can crushed pineapple (include juice)
1½ chopped walnuts or pecans
1 tsp. vanilla extract

Directions:

Sift flour, baking powder, baking soda, salt, cinnamon together.

Combine oil and sugar in a large mixing bowl then beat thoroughly with electric mixer.

Add eggs, one at a time, beating well after you add each egg.

Sift thouroughly flour mixture into eggg mixture and beat thoroughly.

Stir in remaining ingreadiants.

Spread batter evenly into well greased and floured 9 X 13 inch pan or 2 loaf pans.

Bake in a preheated 350º oven for 1 hour or until cake tests done.

Let cool in pan for 5 minutes then turn out on cake rack to finish cooling. Dust with sifted powder sugar to serve.
