1 medium onion (cut into rings)
1 green pepper (cut into rings)
20 oz. can of chunky pineapples (save the juice)
4-5 bone-in pork chops
¼ c. brown sugar
¼ c. ketchup
1 tbsp. apple cider vinegar
¼ tsp. oregano
¼ c. shortening oil or vegetable oil
½ c. pineapple juice

Directions:
Directions:
Brown chops in the shortening oil or vegetable oil. Set aside. Use the drippings to fry the onion and green pepper rings, as well as the pineapple chunks.

Mix the brown sugar, ketchup, pineapple juice, vinegar and the oregano. Double the sauce recipe if desired. Pour over chops.

Bake at 350º for 20-30 minutes for thick-cut chops. If you use thin pork chops, they barely need time in the oven at all, browning them is almost enough. For the best results, use an instant-read meat thermometer and remove chops from oven when internal temperature reaches 145º.

Serve with mashed potatoes because the sauce is so good spooned over them! Be careful not to over cook your chops!
