1 small onion
1 C ketchup
¼ C dark brown sugar
3 T cider vinegar
2 T molasses
1 T Dijon mustard
2 tsp Asian chili sauce
4¼ lbs. boneless pork shoulder
kosher salt and pepper

Directions:
Directions:
In a medium bowl, mix the onion with the ketchup, brown sugar, cider vinegar, molasses, mustard and chili sauce. In a slow cooker, cover the pork with the ketchup mixture. Cook on high until pork is very tender, about 6 hours. Transfer pork to a work surface and using 2 forks, shred the meat.

Pour the sauce into a large saucepan and bring to a boil. Cover over high heat until thickened, about 15 minutes. Stir the shredded pork into the sauce, season with salt and pepper.

Can be refrigerated for up to 4 days.

Pork sirloin from Costco is very lean and inexpensive. One pork butt feeds a lot of people.
Scott likes his on Hawaiian rolls, if we'll buy them for him.
