2 small heads of butter lettuce
12 petite gold gourmet potatoes, cut into eight pieces
5 oz. green beans
¼ c. sliced black olives

For the Croutons:
1 small garlic clove per 4 servings
6 slices of toasted French or Italian bread, dried out
1 tbsp. olive oil
salt and pepper

For the Dressing:
1 tbsp. dijon
1 tbsp. apple cider vinegar
3 tbsp. olive oil

Directions:
Directions:
Boil potatoes the night before then cube. Steam green beans. When done, put in ice water so they stay green and stop cooking.

Croutons: Crush garlic on bread pieces. Add oil and salt/pepper. Toss until oil is absorbed. Bake croutons on medium high about five minutes.

Dressing: Mix vinegar and mustard. Whisk in oil.

Put salad, potatoes, beans, croutons, and olives in a bowl. Top with the dressing. Toss.

This is a vegan take on Salad Nicoise. To make it non-vegan, add tuna, anchovies, hard-boiled egg or tomatoes.
