1 large corned beef, seasoning packet included
6 pack Guinness Beer
vegetable oil and butter to crisp the corned beef after it's shredded
1 loaf rye bread
1 large jar sauerkraut or your favorite coleslaw
1 package sliced Swiss cheese
butter
1 bottle Thousand Island dressing

Directions:
Directions:
Place the corned beef and seasoning packet in a large slow cooker or large pot, cover the corned beef entirely with Guinness. If needed, you can add water to completely cover the corned beef. Cook covered on low for at least three hours or until the corned beef easily shreds apart with a fork.

Once the corned beef is done, remove from the pot or slow cooker and shred.

Heat up and grease a cast iron pan or skillet with vegetable oil and butter. The pan is hot enough when you put a little water on it and the water sizzles away. Take a bit of corned beef (enough for one or two sandwiches) and "crisp" up the meat on the skillet, about two minutes.

Spread a thin layer of butter on the outside of two pieces of rye bread. Spread a thin layer of thousand island dressing on the inside of only one piece of bread (not the side with the butter).
Layer the sandwich starting on the thousand island side with the crispy corned beef, two pieces of Swiss cheese, and a little bit of sauerkraut or coleslaw. Add the other piece of buttered rye bread to make the sandwich.

Cook the sandwich on the skillet like a grilled cheese sandwich. You can cover the sandwich with a wet pan cover, the steam will help melt the cheese. Flip once. Serve right away.
