Prepared Pie Crust (cooked)

Mix together:
3 eggs
1 1/2 to 2 c. milk

Add: 1/4 c. brocolli or spinach (thawed)
1/4 c. cubed cheese (your choice)
2 TB chopped onion
Salt and Pepper

Bake unfilled pie crust at about 350º for 20 minutes. (See package directions)
Be sure to brush the edge with milk or water so it will not overcook.

Pour egg and milk mixture into baked crust.
Layer whatever variations of meat and vegetables you choose.
Add cheese.
Bake for about 1 hour. Filling should be stiff and rise.

This is a great make-ahead breakfast dish if you're having a brunch or just planning a special weekend breakfast. I like to do it with eggs, maple ham cubes, and cubed cheddar cheese and sometimes I also add breakfast potatoes.
