8 egg whites, room temperature
½ tsp. crème of tartar
¼ tsp. salt
½ cup icing sugar
1cup cake & pastry flour
1 cup granulated sugar
½ tsp. vanilla

Directions:
Directions:
Mix room temperature egg whites, creme of tartar and salt together until foamy. Add sifted icing sugar and mix to a medium peak, not stiff. Add vanilla to egg whites. Sift cake and pastry flour and sugar together and whisk into egg and sugar mixture until just blended. Pour into ungreased pand and bake 325ºF for 25 to 30 minutes. Cool upside down on wire rack.
