4 artichokes top third removed and tips trimmed
2 lemons split

Marinade:
1 cup olive oil
⅓ cup balsamic vinegar
1 Tbsp chopped garlic
1 Tbsp chopped parsley
½ tsp salt
¼ tsp black pepper
Herbed goat cheese crumbled

Basil aioli:
1 large egg
1 Tbsp lemon juice
⅓ cup basil
2 Tbsp chopped green onions
½ tsp salt
black pepper
1 cup olive oil

Directions:

Marinade: Mix ingredients all together and set aside.

Basil aioli: Combine ingredients in a food processor and, stream in oil with the machine running slowly.

Fill a pot ¾ full with water and add ¼ cup salt, bring to a boil. Rub artichokes with the lemon and place in pot. Place a damp towel on top and cook for 15 minutes or until bottoms are just tender and leaves pull out easily. Drain, cool and cut artichoke into quarters (be sure to pull out the purple prickly leaves), Toss with marinade. Remove from marinade and grill until warm and lightly charred. Place on platter and top with crumbled goat cheese, drizzle with basil aioli, and serve extra aioli on the side for dipping.
