3 heads of romaine Lettuce

Homemade croutons:
4 cloves garlic, chopped
½ cup olive oil
1 baguette cut into 1” cubes
Salt & pepper

Dressing:
2 eggs
2 Tbsp fresh squeezed lemon
2 Tbsp Dijon mustard
1 Tbsp red wine vinegar
1 Tbsp Worcestershire
3 cloves garlic, chopped
6 anchovy fillets
¼ cup grated parmesan cheese
1 cup extra virgin olive oil
salt & pepper

Directions:

Croutons: Use blender or food processor for oil & garlic. Pour into bowl, toss bread crumbs coating with oil/garlic, season with salt & pepper. Put bread cubes on cooking sheet & bake 350* for 10-15 minutes, let cool.

Dressing: mix eggs, lemon juice, mustard, vinegar, Worcestershire, garlic, anchovies & parmesan in blender/food processor and purée. While blender is running add olive oil slowly, add salt & pepper to taste. Chop romaine lettuce. Combine lettuce, croutons in large bowl and mix in dressing. Add ½ c of Parmesan cheese to mix, salt & pepper to taste!

This has been around the SFFD for decades. It’s been used in a couple of different SFFD firehouse cookbooks over the years. The Caesar has been a firehouse tradition.
