1½ c. butter, room temperature
1 c. sugar
1½ tsp. vanilla
3½ c. flour
½ tsp. table salt
2 lg. eggs, lightly beaten
12 oz. sweetened flaked coconut
44 small soft caramel candies (12 oz, such as Kraft)
6 T. heavy cream
large flaky sea salt

Directions:
Preheat oven to 350° F. Cream butter and sugar, then add in vanilla. Gradually add in flour and table salt. Press dough in plastic wrap to condense, then roll dough into 11⁄4 inch balls. Dip each ball in beaten egg, and roll in coconut. Place balls on parchment paper lined cookie sheet and press an indentation into each with your thumb. Bake 10 minutes, remove from oven and repress indentation, then bake another 9-10 minutes. Cool on wire rack. Melt caramels and heavy cream over low heat. Spoon into indentations of cookies and sprinkle with sea salt.
