1 large red onion, chopped
1/4 c. olive oil
21/2 - 3 c. water, divided
1 tsp. cayenne pepper
1/4 tsp. powdered ginger OR 1 Tbsp. fresh ginger crushed
1 diced garlic clove
1 c. red lentils, rinsed
1 Tbsp. butter
salt and pepper to taste

Saute onions until light brown for 6-8 minutes over medium heat. Now add the oil. Once it's simmering add 1/4 c. water and the seasonings - it will be thick. Add the butter and about 1 c. water (add slowly so the the spices can mix with the broth). Add the lentils and cook and stir. Then add an additional cup of water and bring everything to a boil. Turn down the heat and simmer for 10 minutes or until the lentils are cooked (add more water if needed). Add salt and pepper. Serve with naan bread, rice or quinoa.
