2 c. water
1 tsp. salt
1 c. brown lentils
1 small onion diced (optional)
1 c. oats (regular or quick cooking)
3/4 c. grated cheese (cheddar or swiss)
1 egg
1-2 c. veggies if you want to add some nutrients (sweet peppers cut up, frozen or fresh spinach, diced tomatoes, zucchini)
1 c. spaghetti or pizza sauce

Preheat oven to 350º. Combine water and salt in a sauce pan. Add lentils and cook for 25-30 minutes - until lentils are soft and most of the water is evaporated. Drain if needed and then mash if needed. Transfer to a mixing bowl (I just keep it in the pan) and stir in onion, oats, cheese, veggies, egg and sauce. Mix well. Spoon mixture into a greased loaf pan. Smooth out the mixture and top with additional sauce and cheese. Bake for 40-50 minutes until the top of the loaf is dry and firm. Cool for 10 minutes and then eat!

Susan Trask gave me this recipe. Jason and I really like to have it on a night when the kids have spaghetti (again!). I always double the recipe and freeze one loaf.
