½ shallot, finely chopped
2 garlic cloves, finely chopped
1 red fresno chili, finely chopped
¼ c. red wine vinegar
½ tsp. kosher salt
1 c. cilantro, chopped
½ c. flat leaf parsley, chopped
¼ c. fresh oregano, chopped
⅓ c. extra virgin olive oil (possibly more)

Directions:
Directions:
Combine shallot, garlic, chili, red wine vinegar and salt. Let stand 10 minutes. Mix in cilantro, parsley, oregano and olive oil. Add more oil if needed. Salt, to taste.
