4 slices Bacon
1 Sweet Onion, halved and thinly sliced
1 ½ C Elbow Macaroni
2 C Mozzarella Cheese, shredded
4 oz Gruyere Cheese, shredded
1 C Light Cream
⅛ tsp Black Pepper
1 C Bread Crumbs

Directions:

Preheat oven to 350º. Bake the bacon until crisp, turning once. Drain bacon on paper towels; crumble. Drain bacon drippings into saute pan.
Cook onion in bacon drippings for 8-10 minutes or until onion is tender and golden brown. Set aside.
In large saucepan cook macaroni according to package directions. Drain and return to saucepan. Stir in crumbled bacon, onions, 1 ½ C of the mozzarella, the Gruyere cheese, cream and pepper. Toss gently to combine. Spoon into a 1 ½ quart casserole dish.
Bake uncovered for 20 minutes. Stir gently. Top with remaining mozzarella cheese and sprinkle with bread crumbs. Bake for additional 10 minutes or until top of casserole is brown and bubbly. Let stand 10 minutes.
