¾ cup cooked mashed and pack sweet potato
2 cups coconut milk, at room temperature
1½ cups mini dairy free semi sweet chocolate chips or milk chocolate
½ tbsp vanilla extract
½ tsp sea salt

Directions:
Directions:
Bake sweet potato at 400º with skin still on till very soft. Do not steam or boil as too much water will get into the potato. Let it cool, peel off skin, and mash it with a fork. Pack in measuring cup and level off. Add it to a blender. Add coconut milk, vanilla and salt. Don’t blend yet. Melt chocolate chips in a double boiler or the microwave until about 90% melted being careful not to burn the chips. Stir until completely melted and smooth. Add melted chocolate to the blender and blend on high till completely smooth. Chill and enjoy.
