1 bunch kale
1 medium sized carrot
1/2 red onion
½ cucumber
1/2 apple
1 handful pine nuts or sunflower seeds
Juice of 1 lemon
1-2 Tbsp olive oil
1 tsp sea salt

Directions:
Directions:
Finely chop the kale and place it in a large serving bowl.

Drizzle the olive oil and sea salt over the kale. Massage and mix the kale with your hands until it starts to break down and soften.

Dice the carrot, apple and red onion. Combine with the seeds of your choice and the lemon juice. Toss into the pre-massaged kale and serve.
