½ c butter
chopped: 2 med onions
3 ribs celery
2 bell peppers
¼ c fresh parsley
¼ c flour
2 lbs cooked crawfish tails with juice
1 lb Velveeta (Mexican w/jalapenos) cubed
2 c half-n-half
3 garlic cloves, crushed
salt & pepper to taste
Tony Chachere's Cajun Seasoning
1 lb fresh fettuccini, cooked, drained
Freshly grated Parmesan cheese to taste

Directions:
Directions:
Preheat oven to 350º.
Melt butter, & cook veggies, 10 minutes til translucent.
Stir in flour & mix. Add parsley & crawfish.
Stir in all but the pasta & parmesan.
Cook to melt cheese & heat mixture - stir constantly.Add cooked pasta & toss to coat.
Pour into large buttered baking dish.
Sprinkle w/parmesan.
Bake 20 min or until heated through.

Tastes so much better if you make it the day before and place it in the refrigerator overnight to soak the sauce into the noodles. Can easily be doubled!
