5 boneless, skinless chicken breast halves (or the right number for your family)
1 c. flour
salt
freshly ground black pepper
4 tbsp. butter
½ c. olive oil
4 garlic cloves
¼ c. fresh lemon juice
grated zest of 1 lemon
½ c. chicken broth
1 tsp. sweet paprika
1 jar capers packed in brine, drained

Directions:

Pound the chicken to an even thickness, about ½ inch.

On a dinner plate or in a large, shallow dish, combine the flour, one teaspoon salt and ½ teaspoon pepper. In a large skillet over medium-high heat, melt the butter with the olive oil. Dredge the chicken in the flour and sauté on each side until it turns white. Transfer the chicken to the insert of a 5- to 7-quart slow cooker. In a skillet with butter and oil add the garlic, lemon juice and zest, broth, paprika and capers. Cook for two minutes and then pour the mixture into the slow cooker. Cover and cook on high for one hour, or on low for two hours, until the chicken is cooked through.

Serve the chicken and sauce over rice with your favorite fresh vegetables!
