3 eggs
2 c. sugar (more or less plus some for sprinkling on top before baking)
¾ c. softened butter
1 - 2 tsp. almond extract
2 c. all purpose flour
1 bag cranberries (2 ½ to 3 c.) fresh or frozen, (thawed)
1 c. chopped pecans

Directions:

Preheat oven to 350º. In a large mixing bowl, beat eggs with sugar for 5 minutes until slightly thickened and light in color. Add softened butter and almond extract and beat 2 more minutes. Stir in flour with spatula until almost combined. Add chopped nuts and cranberries, stir until fully mixed. Spread batter into 9x13 greased pan or glass dish. Sprinkle with sugar and bake for 55 - 60 minutes or until an inserted toothpick comes out clean. If desired, serve with whipped cream.
