3 pounds of Calamari
1/3 cup olive oil
4 Tbs. lemon juice
2 Tbs. minced parsley
2 Tbs. minced fresh mint
2 Tbs. capers
2 cloves minced garlic
The peel of 2 lemons sliced thinly and cut in 1/8 to ¼ inch slivers
1 jar diced pimentos (for color)
Salt, pepper, and garlic salt to taste

Directions:

Clean and skin calamari or you can purchase rings and tentacles.
Rinse and toss in strainer until edges curl.
Place calamari in boiling salted water. Let cook until water resumes boiling (calamari turns pink) do not let cook more than 12 to 15 minutes otherwise you’ll toughen the calamari.
Pour off water – drain and let cool.

Mix all ingredients together

Let chill overnight
