1 lb beef or chicken, cooked and chopped
1 box spicy rice
2 cups shredded cheddar cheese
2 jars salsa
1 can refried beans
1 package flour tortilla shells

Directions:
Directions:
1. Cook rice; add cooked meat.
2. Using a large round casserole or 9x13 pan layer the ingredients as below:
Salsa, tortilla, refried beans, meat mixture, cheese, tortilla. Repeat
3. The top layer is tortilla shell topped with salsa and cheese.
4. Bake covered at 350º for one hour.
5. Cool 10-15 minutes before serving.
Hints:
If using a 9x13 pan, square off tortillas by cutting the rounded edges. If using round casserole you will have more layers and it will take more cooking time. You may want to add the top layer of cheese 10 minutes before the casserole is done baking to prevent over-browning.
