2 c. w. sugar
1 c. butter
1 c. fruit juice
3 c. flour
2 tsp. b. powder
½ tsp. salt
3 c. raisins
½ lb. pecans
½ lb.almonds
1 lb. mixed fruit
½ lb.coconut
½ lb.candied pineapple
½ lb. cherries
1 can crushed pineapple
8 egg whites

Directions:
Directions:
Cream butter and then add sugar gradually, while beating.
Sift b. powder and salt with half of the flour. Add to butter mixture,
alternately, with fruit juice.
Wash raisins in boiling water and drain. Mix all fruit and nuts together.
Over these, sift remaining flour and stir lightly. Add to butter mixture.
Beat egg whites until stiff and fold gently into cake batter.
Line fruit cake pans or loaf pans with brown paper ( or parchment paper )
Fill ⅔ full, and bake in 250' oven for 2¾ hours.

This was my Mom's Christmas cake recipe. She baked it at least 3 weeks before
Christmas and stored it in a cool cupboard. I do not remember any spirits being
added to the batter or to the storage process.
