3 Eggs....................................................................................3 Cups Flour
1 Cup Oil................................................................................2 tsp Baking Soda
2 Cups Sugar.........................................................................1-½ tsp Cinnamon
2 tsp Vanilla..........,................................................................1 tsp Salt
2 Cups Shredded Zucchini....................................................3-½ tsp Nutmeg
1 8 oz Can Crushed Pineapple..............................................¼ tsp Baking Powder
Nuts and Raisins, optional

Directions:
Directions:
Beat eggs, oil, sugar and vanilla until thickened. Sift together the dry ingredients. Beat in well then stir in nuts and raisins. Pour into 2 greased loaf pans. Bake at 350º for 1 hour. For APPLE CAKE substitute 3 Cups Apple for zucchini.
