Salsa
1 can pinto beans (drained)
1 can black-eyed peas (drained)
1 can shoepeg corn (drained - Green Giant makes this)
1 small jar pimento
1 c chopped celery
1 green pepper chopped
2 bunches green onion chopped
1/2 of a 4 oz can jalepenos chopped or diced

Dressing
1/2 c vegetable oil
1/2 c rice vinegar
1/2 c sugar
1 tsp salt & 1/4 tsp pepper

Directions:
Directions:
Combine the dressing, bring to a boil and let cool. Pour over the other ingredients and let soak for 1 hour. Drain (I don't drain mine, I just leave it in the mix.)

Serve with Tostito chips "Scoops"
